MASALA CHAI (NORTH INDIA)
The ubiquitous drink of India, we far preferred the more heavily spiced and creamy stuff in Rajasthan to the more subtle flavouring elsewhere. We’ve tried a few different recipes now and it seems to be one of those things that’s trial and error and totally adjustable according to taste.
Ingredients:
- 6 cups water
- 4 tsp tea leaves
- 1 tsp (or more) roughly chopped ginger
- 2 tsp green cardamom
- 1/2 cup milk
- sugar to taste
And then:
- Boil the water, tea, ginger and cardamom powder together for 3 minutes. Add the milk and sugar and boil for another 2 minutes.
- Strain and serve.
