The ubiquitous drink of India, we far preferred the more heavily spiced and creamy stuff in Rajasthan to the more subtle flavouring elsewhere.  We’ve tried a few different recipes now and it seems to be one of those things that’s trial and error and totally adjustable according to taste.



  • 6 cups water
  • 4 tsp tea leaves
  • 1 tsp (or more) roughly chopped ginger
  • 2 tsp green cardamom
  • 1/2 cup milk
  • sugar to taste

And then:

  1. Boil the water, tea, ginger and cardamom powder together for 3 minutes.  Add the milk and sugar and boil for another 2 minutes.
  2. Strain and serve.
